Fresca

Fresca, just off of College and Spadina was today's choice. it was actually my second time ever having it but the first time I did, I let it sit way too long and by the time i wolfed a slice it was borderline cold. i'm over that bullshit, this time i did it right - called ahead, and got there just as they slid it out of their oven and into a lovely white box. call me simple minded but i love a box with no design. theres a certain secrecy about it.


the interior of the pizzeria was nothing to write home about. honestly I forgot what it looked like as soon as I stepped outside. they serve pizzas, what else do you want from them?


now my high school whipped me into being a good little boy so in terms of the history of the spot, i'll cite me sources for this one. Dave Portnoy of Barstool Sports had a great little video on it where he gives you the crash course. So apparently the place was originally called Massimo's (mispronounced in the video, thanks Dave), owned by an italian family but all the cooks were vietnamese. after a little while of being in business as a popular spot, the head of the operation dies - and his son takes over. turns out this son is a bit of an asshole, so everyone quits. the former cook, opens a spot nearby and gets the gang back together: Fresca is born.


now for the pizza - good hold, yet thin. just how i like em. its nice knowing that you can eat half of a full pie and not feel like shit afterwards. I think the cheese couldve been a bit better if they let the mozza sit for an extra day or so (if it was indeed fresh). the extra day i find elevates the flavour nicely, but what do i know? my biggest gripe with it was that somehow the majority of the sauce was nonexistent. im not sure if this is an amateur thing to say but i like what i like and i LOVE a lot of sauce on my 'za. i mean fine, don't go overboard on it but a reasonable amount at least. don't get me wrong - the sauce here was nice and tangy. the issue was that the only place I could really find it was bunched up around the crust of the pizza.


i liked it, it was a good slice. add some more sauce to the body of the slice and we're flying.
